Lemony Courgette Cake

This recipe has so many benefits, it's hard to squeeze them into one post. Here's a summary:

  1. High in protein, fibre and healthy fats

  2. A sneaky way to get in some greens

  3. Very easy, from start to finish

  4. You only need a small bit and it keeps you fuller for longer (because of point #1).


Dairy-free, indulgent chocolate truffles

Ingredients

(Makes 15)

  • 2 eggs

  • ½ cup / 125ml olive oil or butter

  • 1/3 cup / 80g honey

  • 1 tsp vanilla extract

  • 1/2 tsp ground cardamom

  • Zest of 1 lemon

  • 1 cup / 250ml grated courgette

  • Pinch salt

  • 1 tsp baking powder

  • 200g / 360ml ground almonds

Method

  1. Whisk the eggs and olive oil until pale and creamy

  2. Whisk in the honey, vanilla extract, cardamom and lemon zest

  3. Stir in the courgette, salt, baking powder and ground almonds

  4. Scrape into a small loaf pan and cook at 160C for 30-40 minutes

  5. This can also be made into muffins, cook for less time.
