Ingredients
(Makes 15)
2 eggs
½ cup / 125ml olive oil or butter
1/3 cup / 80g honey
1 tsp vanilla extract
1/2 tsp ground cardamom
Zest of 1 lemon
1 cup / 250ml grated courgette
Pinch salt
1 tsp baking powder
200g / 360ml ground almonds
Method
Whisk the eggs and olive oil until pale and creamy
Whisk in the honey, vanilla extract, cardamom and lemon zest
Stir in the courgette, salt, baking powder and ground almonds
Scrape into a small loaf pan and cook at 160C for 30-40 minutes
This can also be made into muffins, cook for less time.
